Asian BBQ Shrimp with Asian Slaw

Image
What do you do when you only have an hour to make a dish to take over to a friend's house? Panic. Just kidding. Make Asian BBQ Shrimp like I did. ***** I was looking forward to going over my friend Claudia's house all week. She lives on the water, and it's beautiful. It was also potluck, so I was thinking about what I could bring over. Thinking and doing are two different things however. I had work commitments on Wednesday, Thursday, and Friday nights, and thus no time to cook in advance. On Saturday, I also was at work in the morning until 2 pm. I had the wherewithal to take a 2 lb. bag of frozen large shrimp out of the freezer to defrost before I left for work, so when I got home at 3 pm, all I had to do was figure out what to do with them for the 4 pm party. I decided to make an Asian style marinade with pantry ingredients, including  hoisin sauce (Chinese BBQ sauce), soy sauce, and  Thai sweet chili sauce . A 15-minute soak in the flavorful marinade and a 2-3 minute sea

European Style Garlic Shrimp

Image
This recipe is a dish that is savory, spicy and with a lot of garlic, some of you will enjoy it as an appetizer before their meals, while others like me like to finish off seafood as a dessert. This traditional dish has been passed down the family tree, at times I even enjoy it as a quick snack with a side of bread for dipping. This recipe goes great as one of your holiday dishes, your guests will thank you for including it. I prefer to use jumbo shrimp in the recipe and with the cost of seafood continuously on the way up, I would recommend that you purchase a large bag to save on the cost. Sazon goya powder with coriander and annatto is one of the main ingredients in this recipe and can be picked up at most latin grocers, some big box grocery stores or online. I love garlic in my food, for those that would prefer a little less you can cut the garlic cloves in half, a large skillet should be used to cook the peeled and deveined shrimp, plus make a small incision along the back of the s

Strawberry Julius ~ The Perfect Summer Drink

Image
Do you realize it’s less than 2 weeks away until the summer fresh month of June? We had a short bit of snow last week (can you believe it???) and tomorrow it’s supposed to be 80 degrees. That’s Illinois for you! But I’m going to try and forget about that freak of snow experience and focus on summer, my favorite season, which is right around the corner! And what better way to usher in warmer days than with a refreshing summer drink? Today I’m sharing a yummy recipe for Strawberry Julius ! You’ve probably heard of Orange Julius, which is a favorite beverage of my mother’s. I thought … why not Strawberry Julius? So I experimented with the recipe and created this yummy concoction! I love strawberries and June is when they typically come in season here in the Midwest.  We had some Orange Julius the other night, and that’s when I thought about swapping out the orange juice concentrate with strawberry. I’ve never seen Strawberry Julius before but I’m sure someone else has made it at some poin

Garlic Shrimp

Image
The great thing about posting a recipe as generic as “Garlic Shrimp,” is that nobody can complain it’s not authentic. If it has shrimp and enough garlic in it, it’s authentic. Above and beyond that, just about anything goes. The only real debate revolves around whether to cook shrimp first, and then add the garlic; or sauté the garlic first, and then cook the shrimp. I’ve used and enjoyed both methods, but I think I prefer the one shown here. If you cook the garlic first, it mellows out the flavor, and gives it a little sweeter aspect, but it also increases the risk of browning it too much, which is the only way to screw this up. Besides that, it prevents getting any kind of color on the seafood. By searing the shrimp first, you’ll get some nice caramelization, which I think really adds to the depth of flavor. Speaking of flavor, I can’t believe I’m giving away my caper brine secret; but I decided it’s just too good to not share. The little splash of salty goodness does something that’
